Ingredients

Mushrooms – 300g sliced

Eggs – 8 medium

Lentils, canned, rinsed, drained – 1 can (400g)

Fresh Flat-Leaf Parsley – 1/4 cups chopped

Garlic – 2 cloves crushed[ultimate_spacer height=”30″]

Recipe

  1. Preheat oven to 200°C. Line a 16cm x 26cm (base measurement) baking tin with baking paper.
  2. Heat a large non-stick frying pan over medium-high heat. Cook mushrooms and garlic with 1 tablespoon water, stirring, for 5 minutes or until tender (see tips). Set aside to cool.
  3. Combine eggs, lentils, parsley and mushroom mixture in a bowl. Season with salt and pepper. Pour mixture into prepared tin and smooth the surface. Bake for 25 minutes or until golden and set. Cut slice into rectangles to serve.

TIPS: Adding a little water to the mushrooms and garlic stops them from sticking when cooking without oil. Store leftovers in an airtight container in the fridge for up to 2 days. VARIATION: Swap mushrooms for 2 carrots (coarsely grated).[ultimate_spacer height=”30″]

  1. Lightly spray a large non-stick saucepan with oil and heat over medium-high heat. Cook onion, celery and carrot, stirring, for 5 minutes or until onion has softened. Add garlic and ginger and cook, stirring, for 1 minute.
  2. Add spice mix and cook, stirring, for 1 minute or until fragrant. Add puree and ¾ cup (185ml) water and bring to the boil. Reduce heat and simmer, covered, for 10 minutes.
  3. Add chickpeas, zucchini and beans and simmer, uncovered, for 8–10 minutes or until vegetables are tender. Serve with salad leaves and avocado sprinkled with seeds.
